Today’s post is a little different for me. My word of the week last Friday was cake, so it seemed quite apt to be sharing a cake recipe with you. I’m not very confident when it comes to cooking or baking, but I’m always looking for healthier alternatives for meals and snacking. As someone who is looking to lose weight whilst always trying to curb chocolate cravings, healthy chocolate brownies seemed like the perfect solution!
Healthy Chocolate Brownies Recipe and Method
I found this recipe here, on Pinch of Nom. I was on the hunt for slimming world focused baking and snack ideas and they have an abundance of amazing looking recipes which I’d recommend you take a nosey at if you like the healthy chocolate brownies. I’m not affiliated, I just think it’s a great website.
- 100 grams self-raising flour
- 50 grams flora light
- 2 tbsp cocoa powder
- 4 eggs
- 1 tsp baking powder
- 4 tsp chocolate shot (sweet freedom brand found in Aldi or on Amazon is what I used)
- 4 tbsp granulated sweetener
- 25 grams dark choc chips
- preheat oven to 170 degrees C, spray tin with cooking spray and line
- place all ingredients (excluding choc chips) in bowl and mix
- Step three – pour into lined tin and sprinkle choc chips over the top
- Step four – cook for 17 minutes
The recipe recommends dividing the bake into 16 pieces. For anyone following slimming world or weight watchers, these are 2.5 syns each or 2 smart points. They are 59 calories per piece. I took a quick look at some other brownie recipes and a “normal” option would be around 140 calories for the equivalent size. This is of course variable.
Of course, I thought it was only fair that I test the brownies adequately for you and give an honest review. (There are some left still, I promise)
Whilst you can tell that these are not full fat, heavenly chocolate filled brownies, they certainly hit the spot. The texture was good, although a little more spongey than I’d expect from a brownie. I didn’t have chocolate chips, but I can see that they would add a bit of gooeyness to the top so I would keep them in the recipe if you can.
I had two squares of brownie with a cup of tea as I watch the Great British Bake Off and they definitely helped to keep me full for the evening. They also stopped me wanting to run to the shops to buy all of the cakes after watching the bakers serve up their makes, so that’s a bonus!
These brownies can be frozen, which is another big advantage for me. I have a terrible habit of devouring any cake/biscuits/lovely snacks of any kind in the house. If I freeze them however, that’s not so easy. I’d be tempted to defrost them in the microwave and then eat them warm with a good cream alternative such as quark with some vanilla essence mixed in.
